Most of all, it is sensitive to weather. It is difficult to drop by a food stall without good weather. They can't adjust the temperature. And they don't have enough water. This is related to cleanliness. Cleanliness is very important when we eat something, but it is worse than that of a normal restaurant. Moreover, they have tax problems, too. Generally, a restaurant needs an appropriate address and size, but a food stall doesn't have them. So they couldn't get a permit from the government.
