1. What is the difference between keep and keep up?
If you mean just for simple comparison, like in this sentences:
She keeps hiding my charger. = ( usually followed by a verb)
She needs to keep up with the latest technology. = (usually followed by 'with' + object)

>> The word 'keep' has so many meanings depending on the sentence.
examples:
Keep the change. =  (to hold in your possession)
Keep yourself warm. = ( to continue in the same situation for a long time)
I keep my keys in the drawer. = (put/store things somewhere)
Now, if we add a preposition after 'keep', the meaning totally changes. They are called phrasal verbs.
examples:
Keep up the good work. = ( continue doing well)
I can't keep up with my brother's running speed. = ( maintain a rate or pace with someone)
We need to keep up with the latest technology. = ( be updated with the changes)


2. Do I have to add an s after minute when it's number + minute?
-> ex) 30 minutes, 1 minutes, 10 minutes, 25 minutes
example:
I finished a 25-minute class. ( notice that there is an object after minute, so it is used as an adjective)
I studied for 25 minutes. ( talks about the length/how long someone studied)
