When one of the employees helped me for my interview, he asked me the question like this.
"What would you do if guests ate something wrong involved with his alergy?"
So I answered it in Korean. But I would like to translate in English in case that the same question appeared in English interview.

That must be a big problem.
If I were in the situation, I would try to find out if he has to go to the hospital or not and take him to the hospital by my car or calling the ambulance so that he can get midical care immediately.
If not so, I would listen to him and show empathy and apologize.
While I am listening, I would try to find out what the problem is and how I can handle it.
After then, I would offer the solution how I can help him. Certain action should be taken as soon as possible such as giving him a medicine or make him take a rest in the room with his agreements.
All issues always have the answers.

I guess you have said it all right. In that situation in my opinion, the guests should be the first person to be aware of their current situation. It's either they must confirm whether the food has something that may affect their health. On the other side, staff often ask guests if they have an allergy to seafood or what. In the worst-case scenario that both parties are not aware, staff should show concern by asking what's the matter and if they can do anything to help. Staff should listen and empathize. Offer some possible action that may be helpful for the guests. In this case, for me, it is not the restaurant's fault. But then, as a hospitality staff, we still apologize.
