local foods in South Korea it refers that a various different characters that we can taste. lets think Korea geologically. South Korea is a peninsular where covered mountains and the peninsular surrounded by the oceans. so each regions have their especial food because of the weather or the temperature and custom due to those reasons.
so I strongly recommend choose the province for the first step. for example, place where face oceans at east, south, west they have different food culture because of the fishes they can fish is different. East Sea, we can fish squid but the others. at the south there a lot of islands and strong current makes a variety kinds of seafood resource and the west has got a big tidal makes a vast mud beach can harvesting shells. those differences make specific food culture which distinguished.
we can say having foods in different country is relatively experience its custom and culture. for those reasons, first of all, I recommend people to choose the region, pr
